The estate vineyard is currently planted to 25-acres of high-density Riesling, on steep slate soils, that run with the slope, akin to Germany’s famed Mosel region.
The winery, named after Paul’s parents, Joan Hillick and Edward Hobbs, holds special meaning, and pays homage to his roots in western New York where he grew up on his family’s farm. In 2013, he revived his family’s legacy of growing grapes in New York when he acquired this 78-acre estate.
Paul has created a name for himself as a flying winemaker. Over his now 30 plus year career he has become involved in numerous projects around the globe, including vineyards in California, Argentina, Armenia, Spain and France.
Explore our limited production dry riesling surrounded by breathtaking views of Seneca Lake. Guests are welcome on a first come, first served basis.

This tour celebrates the coming of age of Finger Lakes riesling by visiting the wineries of two renowned winemakers: Paul Hobbs with Hillick & Hobbs and Louis Barruol with Forge Cellars. On this tour, you will be guided by Experience! The Finger Lakes’ founder and certified sommelier, Laura Winter Falk, PhD, as she unfolds the story behind why these two renowned winemakers chose to place their stake in the Finger Lakes, and what has been the resulting impact of doing so.
